Culinary artistry from Simone-Lousie Nabb

THEY say that inside every great chef there’s an artist trying to get out and in the case of Simone-Louise Nabb the artistic presentation of her dishes puts her on a par with Picasso.
The recently-appointed chef at the Montgomerie Dubai’s fine dining restaurant,   Nineteen, is making a lot of friends and admirers with her new and exciting concept to the restaurant – Australasian Fusion. 
Incorporating meat from Ranger Valley Farms – the finest Black Angus cattle in Southern Australia –  this clean, crisp and precise method of cooking is proving to be a big hit with the restaurant’s patrons. But it’s not just steaks where Simone-Louise excels. Her fish dishes and other meat dishes are equally delicious – and all beautifully presented.
In the best Australian tradition Simone-Louise took off to see the world with designs on becoming an artist. But her career took a different course and she became fascinated by the art of cooking. She began her culinary career at the tender age of 18, and has since worked in some of the most prestigious restaurants throughout Australia, America, Asia, Europe and the United Kingdom.
She was the first female and youngest Chef de Cuisine to work for the Disney Corporation. During her career she has also cooked for some of the most recognised names in the entertainment industry, including Pavarotti, Kylie Minogue, Elton John and Sting and for a while was the resident chef to the royal family in Belgrade.
In the short time that Simone-Louise has been at Nineteen, she has built up a loyal following which is growing by the week.
Simone-Louise has a sparkling personality and is modest in the extreme about her culinary expertise. “I’ve been lucky to have been able to travel the world and experience so many different styles of cooking,” says Simone-Louise. “I’m also very lucky in having such a good kitchen staff. They have come on leaps and bounds since I’ve been here and they enjoy their job, which shows in the fact that our guests enjoy the dishes we prepare and present. We all work as a team and everyone plays their part.”
